Vegan Quinoa Salad

Ingredients:

  • 1 cup quinoa
  • 1 cucumber, diced
  • 1 bell pepper, chopped
  • 1 avocado, sliced
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup red onion, finely chopped
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • Salt and pepper to taste

Instructions:

  1. Cook the Quinoa: Rinse the quinoa under cold water. In a saucepan, combine the quinoa with 2 cups of water and bring to a boil. Reduce heat, cover, and let it simmer for about 15 minutes or until the water is absorbed. Let the quinoa cool before using.
  2. Prepare the Vegetables: While the quinoa cools, chop the cucumber, bell pepper, avocado, and cherry tomatoes. Finely chop the red onion for an extra kick of flavor.
  3. Mix the Salad: In a large bowl, combine the cooled quinoa with the vegetables. Drizzle olive oil and freshly squeezed lemon juice over the salad.
  4. Season and Serve: Toss the salad gently to combine all ingredients. Season with salt and pepper to taste. Serve immediately or refrigerate for up to a day.
