Ingredients:

  • 2 chicken breasts, sliced
  • 1 can coconut milk
  • 2 tbsp red curry paste
  • 1 stalk lemongrass, bruised
  • 1 bell pepper, sliced
  • 1 zucchini, chopped
  • 1 tbsp fish sauce
  • Fresh cilantro for garnish

Instructions:

  1. Sauté the Chicken: In a large pan, heat some oil over medium heat. Add sliced chicken breasts and cook until golden brown.
  2. Add Vegetables: Add bell peppers and zucchini to the pan, cooking until slightly softened.
