Ingredients:
- 2 chicken breasts, sliced
- 1 can coconut milk
- 2 tbsp red curry paste
- 1 stalk lemongrass, bruised
- 1 bell pepper, sliced
- 1 zucchini, chopped
- 1 tbsp fish sauce
- Fresh cilantro for garnish
Instructions:
- Sauté the Chicken: In a large pan, heat some oil over medium heat. Add sliced chicken breasts and cook until golden brown.
- Add Vegetables: Add bell peppers and zucchini to the pan, cooking until slightly softened.
- Create the Sauce: Stir in red curry paste, followed by coconut milk. Add bruised lemongrass and fish sauce, letting the mixture simmer for 15 minutes to develop flavor.
