Wild Mushroom Risotto
Description:
A creamy and luxurious risotto packed with earthy wild mushrooms. This dish is perfect for mushroom lovers and is an impressive meal for guests.
Ingredients:
- 1 cup arborio rice
- 1/2 cup white wine
- 1 cup wild mushrooms (shiitake, porcini, etc.)
- 1 small onion, finely chopped
- 3 cups chicken or vegetable broth
- 1/4 cup grated parmesan cheese
- 2 tbsp butter
Instructions:
- Sauté Mushrooms: In a skillet, melt 1 tbsp butter and sauté wild mushrooms until golden and fragrant. Set aside.
- Cook the Rice: In a large pan, sauté onions in remaining butter until soft. Add arborio rice and cook, stirring constantly, until the rice is lightly toasted.
- Add Wine and Broth: Pour in white wine, stirring until absorbed. Slowly add broth, one ladle at a time, allowing the rice to absorb the liquid before adding more.
- Finish with Cheese and Mushrooms: Stir in parmesan cheese and cooked mushrooms. Serve immediately.
